The mainstream perspective in the United States is that red meat should be a very limited part of a healthy diet.  Red Meat is any meat that is considered red before cooking (lamb, beef, etc..) This is primarily based on the fact that it contains saturated fat, which the American Heart Association says is the main dietary cause of high blood cholesterol.
